It's a rice superfine with low stickiness, considered one of the best rice in Italy.

Thanks to his roasting and due to its ability to always remain al dente it is among the favorite varieties of fine cuisine.

It's a consistent rice , excellent for risottos, considered “the prince” of rice : it loses little starch but has a good ability to absorb liquids during cooking.

Characteristics : large grains and tapered which absorb condiments perfectly. Widely used for i risottos in all preparations.
